On Thursday we had Jennie Silk, General Manager and Chef at Uli’s Restaurant, on Pulse Mornings to talk about turkey substitute options if you’re wanting to serve something besides turkey at this year’s Thanksgiving dinner. At the same time, she broke down the fool-proof way to cook a turkey for traditional diners South of the Fraser.

Here are some tips….

  1. Cook a smoked brisket instead of a turkey.
    Preheat the oven to 400 degrees. Pop a three kilogram brisket in the oven, lower the heat to 225 and cook overnight for six hours.
  2. Turkey cooking tips –  Rub the entire turkey in butter, fill it full of stuffing, pop it in a 325 degree oven and baste the turkey every hour until tender.
